Raspberry simple syrup is used in lattes, iced teas, ice cream, cakes, and all kinds of desserts. It’s easy to make and adds a delicious flavor to your recipes.

Most store-bought raspberry syrups are made with added flavors, sweeteners, and tons of sugar. That’s why I like to make my simple syrup recipes at home.

However, this healthy homemade raspberry simple syrup has a slightly sweet taste and isn’t as thick as the regular ones. That’s because I used honey instead of sugar which is what thickens syrups.

Okay so here’s the deal, this is a very light syrup and not your regular kind, feels like I’m repeating myself! Anyway, if you want a thicker syrup to use on cakes and cookies or other desserts, simply add a teaspoon of corn flour to this recipe, and voila, it’s done.

Just make sure to mix the corn flour in a teaspoon of water before adding it to the syrup after it boils down a little.

Ingredients for 12 servings | Total time: 1 hr 15 minutes

  • 1/2 cup of water
  • 2/3 cup of raspberries (fresh or frozen)
  • 2 tablespoons of raw honey

Mix the honey with the water until well combined in a small saucepan. Next, set it on medium-high heat and let it boil while stirring continuously.

If you want to continue stirring the mixture, I used a whisk, for at least 10 minutes until some of the liquid reduces and the syrup becomes a little thicker.

Add in the raspberries and let it boil for a minute if you are using frozen raspberries. If not, cut off the heat and add in the fresh raspberries, using a potato masher, puree the raspberries, cover the saucepan, and let it steep for an hour.

Finally, uncover and strain using a fine mesh strainer while pressing the raspberries down with a rubber spatula. I strained mine twice to get rid of all the raspberry seeds. Voila, you’re done.
