Healthy Pumpkin Scones Recipe
Ingredients for 12 servings | Total time: 35 minutes
- 2 1/2 cups of whole wheat flour
- 1 cup of pumpkin puree
- 1/2 cup of almond milk (plain, unsweetened)
- 1/2 cup of butter (light, melted)
- 1 teaspoon of vanilla extract

- 1 teaspoon of ground cinnamon
- a pinch of salt
How To Make Healthy Pumpkin Scones
Preheat the oven at 425F and line your baking sheet with parchment paper, set it aside. In a large clean bowl, mix together the dry ingredients. Mix the flour, cinnamon, pumpkin spice, and salt. Next, pour in the melted butter and mix together with a fork to coat the flour completely.
Now add in the pumpkin spice, vanilla extract, milk, honey, and continue to mix until you are left with a dough. Flour your kitchen counter and transfer the dough onto it. Knead the dough 8-12 times and using a rolling pin, roll the dough into an 8 inch disk and cut into 12 wedges with a pizza cutter.
Finally, place the wedges on the lined baking sheet but make sure to place them 2 inches apart and bake for 15 minutes. Remove the scones from the oven and let it cool, if using a glaze, drizzle it on the scones while they are still warm and serve.

Storage
I always recommend eating your scones while they are still warm especially when using low calorie or low fat ingredients. With that being said, you can store these scones in an airtight container and place them in the fridge for up to 2 days.
You can also freeze these scones but before you do, make sure they cool completely and place them in an airtight container. I found that wrapping them up in aluminum foil placing in a container with a lid makes the texture stay the same after you reheat them.
If you do freeze the scones, make sure to let them thaw for at least a few hours before reheating them in the microwave.
