How To Make Healthy Pumpkin Banana Muffins

First, you need to preheat your oven at 350F and line your muffin tray with muffin sheets. Next, you need to mix your dry ingredients. In a large clean bowl, combine the flour, walnuts, baking powder, baking soda, salt, cinnamon, and pumpkin spice.

Now it’s time for the wet ingredients. In another large bowl, mash the bananas with a fork until you get rid of all the lumps. Next, whisk together the eggs and vanilla extract in another bowl and pour it over the mashed bananas. Now, add in the honey, melted butter, milk, Greek yogurt, pumpkin puree, and whisk until well combined.

Finally, pour in the dry ingredients and using a spatula, fold all of the ingredients together. Make sure not to overmix, we don’t want any gluten forming or have very tough muffins on our hands. Scoop the batter into the muffin sheets and bake for 25-30 minutes. I usually start checking my muffins with a toothpick at 20 minutes.

Note: once your toothpick comes out clean, it means that the muffins are done. You can also bake the muffins at a higher temp for the first 5 minutes so that it rises perfectly before lowering the heat to 350F.

Once the muffins are done, remove from the oven and the muffin tin so that they stop cooking and let them cool completely before serving or garnishing with frosting or fruits.
