Chocolate chips make the brownies delicious, and baking soda helps them rise without adding much fat or calories.
Healthy Pumpkin Brownies Recipe
Ingredients for 9 servings | Total time: 30 minutes
- 1 cup of pure pumpkin puree
- 1 cup of almond butter (smooth)
- 1 large egg
- ½ cup of organic maple syrup
- ½ cup of cacao powder
- ½ teaspoon baking soda
- 1 teaspoon of pumpkin spice
- A pinch of salt
- 1/4 cup of chocolate chips
How To Make Healthy Pumpkin Brownies
In a large bowl, whisk together the egg and the pumpkin spice, next, add in the maple syrup, pumpkin puree, and almond butter and continue to mix until smooth and creamy. Make sure there are no lumps.
Next add in the cacao powder, baking soda, salt, and chocolate chips, and using a spatula, give it a fold and set it aside. Preheat the oven at 350F and line a 8×8 baking pan with parchment paper. Pour the batter into the baking dish and bake for 25-30 minutes.
Once baked, (check the center with a toothpick) remove the pumpkin brownies from the oven and set it on the kitchen counter to cool completely before cutting into squares. Enjoy!
Note: do not over bake the brownies or else they will turn out dry. I start to check mine at 20 minutes, depending on the oven, it could take less than 30 minutes to have the perfect fudgy texture which is what you want. Use a toothpick and poke the center of the brownies, if it comes out without crumbs, it means that it is done.
