Peanut Butter – provides plant-based protein and healthy unsaturated fats, vitamin E, magnesium, and niacin. The healthy fats and protein in peanut butter may help you feel fuller after eating.

Pumpkin puree is naturally rich in beta-carotene, an antioxidant that the body can convert into vitamin A. Vitamin A supports normal vision, immune function, and healthy skin. Pumpkin also provides some fiber, which helps support regular digestion and can contribute to feelings of fullness.

Almond flour contains protein, fiber, healthy fats, magnesium, and vitamin E. Compared with refined wheat flour, almond flour is lower in carbohydrates and provides more fat, protein, and fiber. It is also naturally gluten-free, making these pumpkin balls suitable for people who avoid gluten.

Organic maple syrup provides sweetness and helps hold the ingredients together and provide small amounts of minerals such as manganese and zinc.

Variations

If you want to switch things up, you can use any nut or seed butter of your choice in this recipe and it will still turn out delicious. I’ve tried it with almond butter, and cashew butter and both turned out amazing. If you are allergic to nut butter, try using sunflower seed butter.

You can also add protein powder to these balls to increase your protein intake, I sometimes use vanilla protein powder because it adds a little bit of vanilla flavor to the balls. However, if you want that pumpkin spice flavor, use unflavored protein powder.
