Cucumbers are great for digestion, they help with bloating and do wonders for the skin. Adding this healthy cucumber mint ginger juice recipe to your diet helps boost your metabolism and provides you with essential vitamins and minerals as well.

Okay so just a word of caution, I did not like the taste of this juice recipe! Even though my 18-year-old told me over and over that it was okay, I wasn’t able to get it all down until I added a teaspoon of honey. As healthy as this drink is, I don’t think I’m gonna go there again. 

Before you ask why I posted this recipe, it was requested by one of my long-time readers so I made it!

Lemon juice – is packed with vitamin C and is also a natural diuretic. This means that it helps your body eliminate toxins.

Healthy Cucumber Mint Ginger Juice Recipe

Please do not drink this juice if you are allergic or are sensitive to cucumbers. Also, if you are on high blood pressure or diabetes medication, you may want to refrain from drinking this juice.

Ingredients for 1 serving | Total Time: 10 minutes

  • 2 small cucumbers (washed & sliced)
  • 1/2 inch ginger (peeled & chopped)
  • 1/2 a lemon juice (freshly squeezed)
  • 8 mint leaves (rinsed)
  • a pinch of pink Himalayan rock salt
  • 1 cup of ice cubes (optional)
  • 1/2 cup of water

How To Make This Healthy Cucumber Juice

Combine all of the ingredients above except for the ice cubes and lemon juice into a high-speed blender and blend for 30 seconds or until completely smooth.

Strain the mixture a few times to get rid of extra pulps to get a juice consistency. Add in the ice cubes, garnish with a few fresh mint leaves, and enjoy!

Variations

You can add oranges, tangerine, celery, parsley, or even kale to this juice. Other spices like cinnamon, black pepper, turmeric, and cayenne pepper will make this cucumber drink even healthier.

Storage Options

This cucumber juice is best to drink right away to get all of its benefits and nutrients. However, if you do want to make it a few hours earlier, transfer it into a glass bottle with a lid and close it tightly. Keep it in the fridge overnight.
