Potato Corn Zucchini Soup | Healthy | Low-Calorie

The creaminess of this potato corn zucchini soup will leave you wanting to eat every last drop! You would think that healthy soup recipes are bland and without flavor but not this one! Just add in a little bit of chilli and some fresh lemon juice and you’ll take this recipe to a whole new level.

I’ve been experimenting the past few days with different types of zucchini soup recipes since it’s nearly time for harvest and I simply can’t get enough! Even my picky eater 4-year-old is having a ball devouring these soups. Go ahead and try it and let me know what you think in the comments below.

Benefits of This Potato Corn Zucchini Soup

Zucchini – contains a good amount of fiber, and vitamins C & A. However, zucchini has more vitamin B6 also known as folate which helps with brain health among others.

Potatoes – contain antioxidants, vitamins, and minerals, such as vitamin C, B6, and potassium, all of which are great for heart and digestive health. They are also high in carbs which make you feel full longer during the day. 

Corn – is a great source of fiber which is great for digestion, it also contains some vitamin C and trace amounts of B, E, & K plus potassium. 

Potato Corn Zucchini Soup Recipe

Ingredients for 4 servings | Total time: 45 minutes

  • 2 pounds of russet potatoes (peeled & cubed)
  • 2 medium zucchini (cubbed)
  • 1 medium celery stalk (chopped)
  • 1 cup of corn kernels (roasted or canned)
  • 2 tablespoons of organic virgin olive oil
  • 1 medium onion (chopped)
  • 2 garlic cloves (minced)
  • 3 cups of vegetable stock (low0sodium)
  • 1/2 cup of coconut milk
  • 1/2 teaspoon of cayenne pepper
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/2 teaspoon of smoked paprika
  • 1/2 teaspoon of lemon juice (fresh for garnish)

How To Make This Potato Corn Zucchini Soup

In a large soup pot over medium-high heat, saute the onions until translucent. Throw in the garlic and stir fry until aromatic and add in the potatoes, zucchini, and celery. Let them sautee for 3-4 minutes while stirring occasionally.

Next add in the vegetable stock, cover, and let it boil until tender. Remove half of the vegetables (without liquid) and using an immersion blender, puree the rest of the veggies in the pot.

Once you have an extra creamy mixture, add the veggies you removed back into the soup along with the coconut milk, paprika, black pepper, salt, and cayenne pepper. 

Stir, cover the lid, lower the heat, and let the soup simmer for 10 minutes. Make sure to stir occasionally so that it doesn’t stick to the bottom of the pot. 

Pour into soup bowls, squeeze some fresh lemon juice on top, and serve with either garlic bread or croutons. Enjoy!

Variations & Tips

To increase your protein intake, throw in some cooked shredded chicken breast, bacon strips, or smoked turkey, I actually prefer smoked turkey because it adds an amazing flavor to soup recipes.

You can also add carrots, or peas to make this soup a lot healthier and delicious. I like to squeeze some fresh lemon juice over my soups before serving, it adds a slight sourness that elevates most soups.

If you don’t have an immersion blender, a regular blender will do.

Storage

I usually don’t like freezing soups that contain milk or cream but this soup kept for nearly a month in the freezer and I simply added half a cup of vegetable stock before reheating it on the stove and it was as good as new.

Just make sure to store it in a freezer-safe container before freezing. You can also store this potato zucchini soup in the fridge for up to 3 days and heat it in the microwave when you are ready to serve again.
