I love zucchini, they are one of my favorite veggies, I add them to almost all of my recipes, especially soups but I also love making stuffed zucchini. I made a pot of cabbage and zucchini soup the other day (link below) and it was gone before I could say “soups ready”!
Benefits of This Broccoli & Zucchini Soup
Broccoli – is a great source of antioxidants, and vitamins C, K, and A. It also contains minerals like potassium, calcium, and iron. These antioxidants help protect the body from oxidative stress and reduce inflammation.
Zucchini – contains a good amount of fiber, and vitamins C & A. However, zucchini has more vitamin B6 also known as folate which helps with brain health among others.
Olive oil – contains healthy fats that are great for heart health, lowering high cholesterol, and helps reduce inflammation.
Celery – is low in calories and great for inflammation, weight loss, and great for digestion. Since only a small amount is added to this soup, it only enhances the flavors.
Onions – not only add flavor to your recipes but they also provide you with antioxidants, vitamins C, & B6, along with potassium and sulfur.
Broccoli Zucchini Soup Recipe
Ingredients for 4 servings | Total time: 45 minutes
- 1 medium broccoli head (diced)
- 4 medium zucchini (sliced with peel)
- 1 large celery stalk (chopped)
- 1 medium onion (chopped)
- 2 garlic cloves (minced)
- 2 tablespoons of olive oil
- 3 cups of vegetable stock (low-sodium)
- 1/2 cup of coconut milk
- 1/2 teaspoon of black pepper
- 1/2 teaspoon of ginger powder
- 1/2 teaspoon of salt
- 1/2 teaspoon of dried thyme
- 1/2 teaspoon of smoked paprika
- fresh mint leaves| parsley |olive oil to garnish (optional)
How to Make This Broccoli Zucchini Soup
Heat up the olive oil on medium-high heat in a large soup pot and saute the onions until translucent. Add in the minced garlic and stir fry for 20-30 seconds or until aromatic.
Mix in the zucchini, broccoli, and celery and let it sautee for an extra 10 minutes or until soft. Pour in the vegetable stock, paprika, salt, black pepper, ginger, and thyme, give it a stir and cover. Lower the heat and let it cook until the veggies are cooked through.
Mix in the coconut milk and let the soup simmer for an extra 10 minutes before blending it into a puree using an immersion blender.
Pour into soup bowls, garnish with some fresh mint, or parsley, and a drizzle of olive oil and serve with croutons or garlic bread. Enjoy!

Variations & Tips
If you want to add more protein to this soup, throw in some cooked shredded chicken breast or smoked turkey, I actually prefer smoked turkey because it adds an amazing flavor to soup recipes.
You can also add carrots, to make this soup a lot healthier and delicious. I like to squeeze some fresh lemon juice over my soups before serving, it adds a slight sourness that elevates most soups. If you don’t have an immersion blender, a regular blender will do.
Storage
I usually don’t like freezing soups that contain milk or cream but this soup kept for over a month in the freezer and I simply added half a cup of vegetable stock before reheating it on the stove and it was as good as new. Just make sure to store it in a freezer-safe container before freezing.
You can also store this broccoli zucchini soup in the fridge for up to 3 days and heat it in the microwave when you are ready to serve again.
