For someone who has suffered from rheumatism for almost 3 years now, I can totally relate to what you are feeling right now. Inflammation of the joints, muscles, and other parts of the body isn’t fun at all.

That said, there are ways to reduce symptoms naturally right from the comfort of your home. These methods include eating the right foods, reducing sugar and salt intake, and following a healthy lifestyle.

Anti-Inflammatory Cauliflower Chicken Soup Recipe

This cauliflower chicken soup for inflammation yields 4 servings and takes around 30 minutes of total cooking time.

Ingredients:

  • 2 pounds of chicken breast (cooked & shredded)
  • 3 cups of chicken stock or chicken broth
  • 1 large head of cauliflower (disassembled)
  • 2 large carrots (chopped)
  • 1 medium onion (chopped)
  • 4 garlic cloves (minced)
  • 1-inch ginger (grated)
  • 1 tablespoon of olive oil
  • 1/2 teaspoon of turmeric
  • 1/2 teaspoon of paprika
  • 1 teaspoon of dried mint
  • 1 tablespoon of fresh green onions (for topping)
  • 1 tablespoon of cheddar cheese (topping)
  • 1/2 a lemon (optional)

Preparation:

Begin by heating the olive oil in a medium soup pot and sautee the onions and carrots for 3-4 minutes. Add in the garlic and ginger and stir fry for an extra minute.

Add in the cauliflower, chicken broth, and seasonings. Cover and let it cook for at least 10 minutes or until the cauliflower is soft.

Now, add 90% of the ingredients into a blender and blend until smooth. You could add all but you don’t want the whole soup to be pureed.

Return the soup to the pot and add in the chicken breast. Lower the heat, cover the pot, and let it simmer for 15 minutes.

Serve with some freshly squeezed lemon juice, green onions, and cheddar cheese while the soup is still hot.
