This is probably going to be one of the best low calorie lasagna soup recipes you will ever! It’s easy to make, delicious and comes together so perfectly, you won’t be able to tell the difference. This is simply the best healthy dinner recipe for a cold winter evening that the whole family can enjoy!
I love having a warm bowl of soup while watching my favorite series on Netflix during the winter and apart from my usually hot Mexican soup recipes, this lasagna soup is one of my favorite. That’s because it’s hearty and packed with all the right flavors.
I sometimes sprinkle a bit of cayenne pepper over my bowl to give it a kick cause the kids are too chicken to stand the heat! LOL just kidding but its true. haha! Okay enough wasting your time with my blabbering, here’s your recipe.
Low Calorie Lasagna Soup
Ingredients for 8 servings | Total time: 45 minutes
- 1 1/2 lb. lean ground beef or turkey breast
- 1 tablespoon of olive oil
- 2 large onions (finely diced)
- 4 garlic cloves (minced)
- 1/2 cup of tomato paste
- 1 15 ounce can of crushed tomatoes (undrained)
- 5 cups of chicken stock or broth (low-sodium | fat -free)
- 1 8 ounce package of whole wheat lasagna noodles (crushed into large pieces)
- 1 tablespoon of dried Italian seasoning
- 2 teaspoons of dried basil
- 2 teaspoons of dried oregano
- a dash of salt
- a dash of black pepper
- 1 cup of mozzarella cheese (fat-free)
- 1/4 cup of shaved parmesan (fat-free)
How To Make Lasagna Soup
In a large soup pot, start by heating the olive oil and add in the chopped onions, sauté for 2-3 minutes or until translucent. Next stir in the garlic until aromatic and add in the turkey breast or ground beef.
Continue to cook while stirring until the meat is browned in color. Now is the time to add the black pepper, salt, oregano, basil, and Italian seasoning.
Next, add in the tomato paste and let it stir-fry with the protein to get out some of it’s acids and sourness. Pour in the crushed tomatoes, cook for a few minutes on high heat and pour in the chicken broth or stock.
Finally, add in the noodles, lower the heat and let it cook through until done. This may take around 20-25 minutes. Por into serving bowls, garnish with cheese and serve while still warm. Enjoy!

Storage
You can store leftovers in the fridge for up to 5 days, just make sure not to add the cheese topping and transfer the soup into a container with a lid. If you don’t have a Tupper ware, simply cover with an aluminum foil and it’ll do.
For freezing place the soup into a freezer safe container, cover and freeze without the cheese topping as well. It’ll last up to a month. Simply let the soup thaw on your kitchen counter and reheat in the microwave or on the stove top.
