This healthy parmesan soup is so easy to make, does not require a ton of ingredients, (just a handful of seasonings and herbs lol), and can be ready to eat in as little as 20 minutes. This is actually one of my favorite winter soup recipes so I hope you enjoy it too.

Low-Calorie Healthy Chicken Parmesan Soup

Ingredients for 6 servings | Total time: 20 minutes

  • 2 cups of whole wheat pasta (uncooked)
  • 2 cups of cooked rotisserie chicken (shredded or chopped)
  • 1 medium onion (chopped)
  • 4 garlic cloves (minced)
  • 2 cans of diced tomatoes
  • 4 cups of chicken stock (low-sodium)
  • 2 tablespoons of organic virgin olive oil
  • 2 tablespoons of low-sodium tomato paste
  • 1/2 teaspoon of dried paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • 1 1/2 teaspoon Italian seasoning
  • a dash of black pepper
  • a dash of sea salt (optional)
  • 1 cup of grated parmesan or mozzarella cheese (non-fat)
  • 2 tablespoons of fresh basil (chopped)

How To Make Chicken Parmesan Soup

The first thing you want to do is cook your pasta, read the package for instructions. I don’t add salt to my pasta water because it just increases your sodium intake. Once cooked, rinse with cold water and set aside.

In a large soup pot, over medium-high heat, add the olive oil and saute the onions until translucent in color. Add in the garlic, stir until fragrant, and add the tomato paste. Toss around for 15 to 30.

Add in the tomatoes, stock, parsley, Italian seasoning, oregano, paprika, and pepper. Increase the heat and let the soup come to a boil.

Add in the chicken, lower the heat, and let it simmer for 5-10 minutes. Cut off the heat mix in the pasta and serve in soup bowls. Garnish with cheese, and basil and serve with low-calorie homemade garlic bread.

Serving sizes may vary for different types of soup recipes but generally, if you are eating this soup as a main meal, 1 1/3 cup is considered a serving size. If it’s your side dish, 1 cup is your serving size.

Healthy Chicken Parmesan Soup Variations & Substitutions

To make your soup taste smokier, you can try fire-roasted tomatoes and smoked paprika. If you want a little spice, I use cayenne or ghost pepper. Other than that, I haven’t tried other ingredients.

How To Store Leftover Chicken Parmesan Soup

Generally, I do not like to keep soups that contain dairy for too long in the fridge because they don’t reheat well so I recommend storing leftovers of this soup in the fridge for just a day or two. Make sure to keep it in an airtight container.

To reheat, just throw it in the microwave and it should get some of its original consistency back.
