Cold soups are great for hot summer days, also known as Gazpacho, they can be served as appetizers, part of a main course meal, and as desserts depending on the ingredients. Gazpachos are easy to make and extremely refreshing. Here is my favorite cold cucumber summer soup recipe you must try!
Note: you can omit the garlic to prevent garlic breath but personally, I love having raw garlic in my recipes because they are packed with amazing benefits and great for gut health.
Also, you can serve your cold summer soups with croutons but I usually have mine with toasted pita bread cause it just tastes better.
What Makes This Soup Healthy
Cucumbers – are a great source of vitamin K and fiber, they also contain some potassium. Adding cucumbers to your diet regularly keeps you hydrated, improves digestion, and helps regulate blood pressure and blood sugar levels.
Just make sure you aren’t on blood thinners when adding cucumbers to your diet or you could remove the skin because that’s where most of the vitamin K is.
Dill – has a ton of medicinal properties, it helps reduce inflammation, contains antioxidants, delays cell damage, and may help reduce high cholesterol and high blood sugar levels.
Apart from adding flavor, this herb is also great for vision health because it’s rich in vitamin A.
Garlic – is high in a compound called allicin which according to studies, has a ton of health benefits. Garlic also helps reduce high lipid profiles and high blood pressure and contains anti-inflammatory and antioxidant properties.
These little guys contain prebiotics that promote the growth of good bacteria in the gut and improve digestion.
Olive oil – is a good source of vitamins E & K, and helps reduce high blood pressure and cholesterol. Research shows that olive oil comes with anti-inflammatory properties as well.
Lemon juice – is high in vitamin C which is an antioxidant that prevents cell damage and eliminates free radicals and toxins from the body.
Greek yogurt – is high in protein, calcium, and B vitamins. It’s also a good source of probiotics which improve gut health and digestion as well.
Cold Cucumber Summer Soup Recipe
Ingredients for 1 serving | Total time: 10 minutes
- 3 large cucumbers with peel (chopped)
- 1 tablespoon of fresh dill (chopped)
- 1/2 a garlic clove
- 1/2 tablespoon of extra virgin olive oil
- 1 tablespoon of lemon juice
- 1 cup of Greek yogurt
- a pinch of salt
- a pinch of black
- (scallions, dill, olive oil, sliced lemons to garnish)
How To Make Cold Cucumber Summer Soup
Add the yogurt, cucumbers, dill, olive oil, garlic, lemon juice, salt, and black pepper to a blender, pulse a few times, and blend until extra smooth and creamy.
Pour the soup into a soup bowl, refrigerate for a few hours, and garnish with cucumber slices, lemon slices, chopped scallions, dill, and a drizzle of olive oil.
You can drink this from a glass or straight from the soup bowl, I drink mine with a straw.

Storage
This cucumber soup can be stored in the fridge for up to 3 days. With that being said, make sure to transfer it into an air-tight container before putting it in the fridge.
I also recommend garnishing only when you are about to serve or else your garnish will look wobbly. (I have no idea if that’s even a word lol)
