Chilled Avocado Soup Recipe

Ingredients for 2 servings | Total time: 5 minutes + 1-2 hours chill time

  • 3 large cucumbers (chopped)
  • 1 large avocado (peeled & cored)
  • 1 1/4 cup of yogurt
  • 1 garlic clove (peeled)
  • 1 tablespoon of fresh parsley (chopped)
  • 1 tablespoon of lemon juice (fresh)
  • 1 tablespoon of organic virgin olive oil
  • 1 tablespoon of red wine vinegar
  • 1/2 teaspoon of salt
  • a pinch of black pepper

How To Make This Cold Avocado Soup

Add the avocado, cucumber, parsley, yogurt, and garlic, to a blender and blend until extra creamy. Next add in the olive oil, salt, black pepper, lemon juice and red wine vinegar. Blend for a few seconds and chill for a few hours.

Before serving garnish with some sliced cucumbers, parsley, lemon slices, and chopped red bell peppers. That’s it.

I previously made this avocado soup with dill instead of parsley and it was delicious but parsley adds a whole different flavor! 

You can also add in more cucumber and use sour cream instead of yogurt. More cucumbers will increase the soups water content so sour cream will add thickness.

I also tried it once with only lemon juice instead of both lemon juice and red wine vinegar and it was okay but make sure to increase the lemon juice amount if doing so.

Always add the garnish when you are ready to serve the soup or else they will lose their freshness and wobble in the fridge.

You must always serve this soup cold so chilling for a few hours before serving is a must!
