Salted Caramel Cottage Cheese Ice Cream

A deliciously healthy, low calorie snack that you can have ready to serve in just over an hour. This salted caramel cottage cheese ice cream is soo easy to make, requires only 5 main ingredients and is one of the best clean dessert recipes you will ever try.

I’ve been experimenting with cottage cheese ice cream recipes for a few weeks now and let me tell you, I am loving it! Now even though they don’t turn out as creamy as regular ice cream or as sweet, they are extremely filling and great for us living on a low calorie diet.

With that being said, if you want a very creamy and sweet version for the kid, you can choose full fat cottage cheese and add in condensed milk, omit the brandy and voila, you have yourself the best homemade ice cream ever.

Salted Caramel Cottage Cheese Ice Cream Recipe

Ingredients for 2 servings | Total time: 1 hour 5 minutes

  • 2 cups of cottage cheese ( low fat)
  • 1 teaspoon of vanilla extract
  • 2 tablespoons of maple syrup (organic)
  • 1 tablespoon of brandy (optional but recommended)
  • 2 tablespoons of my date caramel sauce 

How To Make Salted Caramel Cottage Cheese Ice Cream

Start by blending the cottage cheese with the vanilla in a high speed blender until creamy, next, add in the maple syrup, salt, date caramel sauce and brandy and continue to blend until extra smooth and creamy. Transfer the mixture into a lined baking tray, cover with a cling film and freeze for 1 hour. 

You can also store this in a bowl with a lid. I recommend stirring the ice cream 30 minutes into freezing for a creamier outcome. Before serving, remove the ice cream and let it thaw for 5-10 minutes so that it scoops out easily. Garnish with caramel sauce or maple syrup. Enjoy!

Storage

You can only store this ice cream in the freezer for up to one week. Any longer will cause it to form ice crystals because it does not contain enough liquid sweetener.

Variations & Tips

Caramel Syrup – If you don’t have the time to make the caramel syrup above, get a low calorie brand from amazon or simply throw in 3 dates (pitted & soaked), a pinch of salt, and you’ll get the same results. 

Greek Yogurt – is another great substitute for cottage cheese in ice cream but it won’t give you the same amount of protein or taste, however, it’s a healthy alternative.

Cottage Cheese Brand – choosing a good cottage cheese brand is important when making ice cream. If the cheese has too much liquid, your ice cream will end up icy. 

Note: full fat cottage cheese is ultimately best for ice cream but will increase your sodium, fat and calorie intake.

Maple Syrup – I recommend using organic maple syrup in your ice cream recipes because it is less dense and has fewer calories.

Brandy – is added to this recipe to prevent ice crystals and make the ice cream softer.
