  • 2 large eggs (room temp)
  • 2 cups of applesauce
  • 1/2 can of pumpkin puree (15 ounces)
  • 1 1/2 cup of gluten-free flour
  • 2 teaspoons of baking powder
  • 1 teaspoon of baking soda
  • a dash of salt
  • 1 tablespoon of pumpkin pie spice
  • 1 tablespoon of pure vanilla extract
  • 6 Tablespoons of semi-sweet chocolate chips

How To Make Pumpkin Chocolate Chip Muffins

Step 1. Preheat the oven to 350 degrees and line your muffin tray with cupcake liners.

Step 2. Combine the flour, baking powder, baking soda, salt, and pumpkin pie spice in a large bowl.

Step 3. Beat the eggs with the vanilla and add in the pumpkin, and applesauce.

Step 4. Pour the liquid ingredients into the dry ingredients and mix slowly using a rubber spatula and fold in the chocolate chips. Make sure not to over-mix.

Step 5. Fill the batter into to lined muffin tray almost to the top, making sure to leave a little space for it to rise. You can also place some chocolate chips over each muffin before baking.

Step 6. Bake for 15-17 minutes or until your toothpick comes out clean and let the muffins cool in the oven for 10 minutes before transferring them onto an oven rack to cool further.
