Low Calorie Strawberry Cottage Cheese Ice Cream Recipe
Ingredients for 2 servings | Total time: 1 hour 5 minutes
- 2 cups of cottage cheese (low-fat)
- 1 cup of strawberries (frozen)
- 1 teaspoon of vanilla extract
- 2 tablespoons of maple syrup (organic)
- 1 teaspoon of brandy (optional)
How To Make Strawberry Cottage Cheese Ice Cream
Start by adding the cottage cheese, strawberries, vanilla, maple syrup, and brandy to the blender and blend on high-speed for 2-3 minutes or until extra smooth and creamy. Remember, you want to blend until there are no chunks left in the ice cream.
Next, transfer the mixture into a bowl with a lid and let it freeze for 1 hour. Remove from the freezer, let it thaw for at least 10 minutes before scooping up. Serve in little bowls or an ice cream cone with fresh strawberries and a drizzle of maple syrup. Enjoy.

Variations & Tips
Condensed Milk – can also be used to make this ice cream instead of maple syrup but you must know that it’ll increase your sugar and calorie intake so keep that in mind.
Protein Powder – especially 100% whey protein powder will get you enough protein and fewer downsides than most types of protein powders on the market so go ahead and throw in a scoop!
Fruits – you can use bananas, berries, avocado, mango, cherries and even chocolate to make this ice cream so don’t be afraid to experiment.
Brandy – is only added to this ice cream recipe to soften it. I actually learned this trick from a Redditor and it worked soo well. It even reduced the amount of ice crystals I usually get in low sugar ice cream.
Nut Butter – you can add peanut butter to this recipe or any nut butter you like. Another one of my favorite nut butter is almond butter for smoothies and ice cream.
Cottage Cheese Brand – you also want to choose a good brand of cottage cheese or else your ice cream won’t turn out great. I use low fat organic cottage cheese from Alta Dena but you can use any brand you like.
Maple Syrup – when choosing maple syrup for your low calorie recipes, try going for 100% organic. It’s going to reduce your calorie intake a lot. I usually use Organic Natural Maple Syrup From Meridian Foods and it taste amazing.
