This low calorie peanut butter cottage cheese ice cream comes together perfectly with only 5 main ingredients. It’s extra creamy, slightly sweet, has a little bit of salt and perfect for those on a high protein diet. If you want a healthy dessert that is guilt-free, you need to try this recipe.
I’ve been experimenting with a bunch of cottage cheese ice cream recipes this past week and I’ve got to say, some came out great and some were a total waste of time and money. This one however, although not one of my favorites, came out great.
Just a quick note: this is not your regular ice cream. It is not as sweet or as creamy as store-bought ice cream. Since only a little bit of sweetener is used, it won’t give you that creamy ice cream texture and that is why I added a tablespoon of brandy to combat the ice crystals. Peanut Butter Cottage Cheese Ice Cream Recipe
Ingredients for 2 servings | Total time: 1 hour 5 minutes
- 2 cups of cottage cheese (low-fat)
- 1 teaspoon of vanilla extract
- 2 tablespoons of maple syrup (organic)
- 1 tablespoon of brandy (optional but recommended)
- 2 tablespoons of peanut butter (32g=1 serving) (creamy-unsalted)
How To Make Peanut Butter Cottage Cheese Ice Cream
Start by blending the cottage cheese, peanut butter, and vanilla extract into a creamy mixture before adding in the maple syrup and brandy. Continue blending for an extra minute or two until combined perfectly.
Note: you can add all of the ingredients above into a churner for a perfect texture if you have one.
Next, transfer the cream into a lined baking tray or a freezer-safe bowl with a lid and freeze it for one hour. I found that stirring the ice cream half way through freezing gives it a creamier texture and reduces ice crystals.
Finally, when you are about to serve, remove the ice cream from the freezer and let it thaw for 5-10 minutes before scooping into little bowls. Garnish with some chopped peanuts and a drizzle of maple syrup and serve.

Storage
Unfortunately, you can only store this ice cream for up to one week in the freezer. Storing it any longer will turn it into a chunk of ice crystals since it it has a low amount of sugar and fat.
Variations & Tips
Condensed Milk – adding condensed milk will give this ice cream a creamier texture and make it taste like regular ice cream. However, it’ll increase your over all calorie and sugar intake so I recommend using honey if you don’t have maple syrup and want to stick to a lower calorie recipe.
Greek Yogurt – is another great substitute for cottage cheese in ice cream but it won’t give you the same amount of protein or taste, however, it’s a healthy alternative.
Cottage Cheese Brand – choosing a good cottage cheese brand is important when making ice cream. If the cheese has too much liquid, your ice cream will end up icy.
Note: full fat cottage cheese is ultimately best for ice cream but will increase your sodium, fat and calorie intake.
Maple Syrup – I recommend using organic maple syrup in your ice cream recipes because it is less dense and has way less calories.
Peanut Butter – I use Lowes food peanut butter cause it’s one of my favorite brands. Make sure to go for unsalted to reduce your sodium intake.
