A simple, easy, and delightful dessert that is definitely worth trying this summer! This delicious coffee cottage cheese ice cream is low in calories, has only a few ingredients, and absolutely guilt-free! You can have this bad boy ready in just a little over an hour so what are you waiting for?
Okay so I keep on getting asked if you need a churner to make these ice cream recipes I’ve been experimenting with this past week and the answer is no! You do not need one. I make all my ice cream in my humble blender that I’ve owned for years and they come out creamy.
so without further ADO, here is another easy cottage cheese ice cream recipe that I think you should try. Just a quick heads up though, this is not your typical ice cream recipe. This one has way less sugar, slightly bitter, a little harder than regular ice cream but will definitely curb that craving!
Low Calorie Coffee Cottage Cheese Ice Cream Recipe
Ingredients for 2 servings | Total time: 1 hour 5 minutes
- 2 cups of cottage cheese (low-fat)
- 1 teaspoon of vanilla extract
- 3 tablespoons of maple syrup (organic)
- 6 tablespoons of coffee (cold brew, decaf or regular)
- 2 tablespoon of chocolate chips (20g) (optional)
- 1 tablespoon of brandy (optional but recommended)
How To Make Coffee Cottage Cheese Ice Cream
Simply add the cottage cheese, maple syrup, vanilla, and coffee into your blender or churner and blend until extra creamy. Make sure not to leave any chunks in there. Transfer the cream into a bowl or a lined baking tray and mix in the chocolate chips.
Freeze for an hour and when you are ready to serve, let the ice cream thaw for 5 minutes before scooping into little bowls. Garnish with chocolate chips, sift a little bit of cocoa powder, a drizzle of maple syrup and enjoy.

Storage
Sadly, you can only store this ice cream for up to a week, any longer will turn it into a ball of ice crystals (lol). No really, transfer the ice cream into a freezer safe container with a lid and store it up to a week.
Variations & Tips
Condensed Milk – adding condensed milk will give this ice cream a creamier texture and make it taste like regular ice cream. However, it’ll increase your over all calorie and sugar intake so I recommend using honey if you don’t have maple syrup and want to stick to a lower calorie recipe.
Greek Yogurt – is another great substitute for cottage cheese in ice cream but it won’t give you the same amount of protein or taste, however, it’s a healthy alternative.
Cottage Cheese Brand – choosing a good cottage cheese brand is important when making ice cream. If the cheese has too much liquid, your ice cream will end up icy.
Note: full fat cottage cheese is ultimately best for ice cream but will increase your sodium, fat and calorie intake.
Maple Syrup – I recommend using organic maple syrup in your ice cream recipes because it is less dense and has fewer calories.
Peanut Butter – I use Lowes food peanut butter cause it’s one of my favorite brands. Make sure to go for unsalted to reduce your sodium intake.
Brandy – is added to this recipe to prevent ice crystals and make the ice cream softer.
Chocolate Chips – I use organic food bars chocolate chips because they have less sugar and are low in calories. If you don’t have chocolate chips, simply crush up some chocolate bars and it’ll do.
