Ingredients for 6 servings | Prep & Cook time: 40 minutes

  • 2 cups of cooked ham (diced) I use leftovers
  • 3 medium carrots (chopped)
  • 3 celery stalks (chopped)
  • 1 large onion (chopped)
  • 4 garlic cloves (minced)
  • 2 medium russet potatoes (peeled and diced)
  • 1 tablespoon of olive oil
  • 4 cups of low-sodium ham stock
  • 2 cups of water
  • 1 teaspoon of Italian seasoning
  • 1/2 teaspoon of black pepper
  • a dash of salt (optional)

How To Make This Ham Potato Soup

In a large soup pot, heat the olive oil over medium heat and saute the onions until translucent. Add in the garlic and stir for 30 seconds until fragrant.

Next, add the carrots and celery and continue to stir fry for 5 minutes. Pour in the ham stock and water, increase the heat, and let the soup boil. Half cover the pot and lower the heat to medium after 10 minutes, let the vegetables cook until tender.

Once the veggies are cooked, using a hand blender, puree most of the soup but make sure to leave in some chunks. This step makes your soup creamy without adding in extra cream.

Finally, add in 90% of the ham, seasoning, black pepper, and salt, let the soup simmer for 5 minutes on low heat, and serve. Garnish with the rest of the ham.

What To Serve With Ham Potato Soup

There aren’t many healthy options for low-calorie soups so I try to make my own. I actually made a tray of roasted assorted vegetables for this ham and potato soup. Gather some cherry tomatoes, sweet potatoes, asparagus, brussels sprouts, and broccoli.

Drizzle with a tablespoon of olive oil and sprinkle with salt and roast in the oven. You can also have some homemade low-calorie garlic bread or a slice of sourdough.

Variations & Substitutions

As for variations of this soup, you can add cannellini beans, corn, broccoli, cauliflower, and my favorite, a dash of cayenne pepper to add some spice! It really depends on your personal preference but always experiment with your recipes.

How To Store Leftovers

Since this soup doesn’t contain cream, you can store it in the freezer for up to 2 weeks just so the vegetables don’t become mushy after you reheat them. For storing in the fridge, empty the rest of your soup in an airtight container and keep it for up to 5 days.
