This date cottage cheese ice cream comes together using only 5 main ingredients. It’s low in calories and perfect for a hot summer date. If you’re looking for a healthy snack or dessert, you need to try this ice cream recipe. 

Dates are one of my favorite natural sweeteners that I use in most of my homemade desserts because it’s packed with amazing health benefits like antioxidants and B vitamins, potassium and fiber. It’s great for digestion and helps regulate blood sugar levels.

Healthy Date Cottage Cheese Ice Cream Recipe

Ingredients for 2 servings | Total time: 1 hour 5 minutes

  • 2 cups of cottage cheese (low fat)
  • 6 Medjool dates
  • 1 tablespoon of maple syrup (organic)
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of brandy (optional but recommended)

How To Make Date Cottage Cheese Ice Cream

Soak the date in boiled water for 5-10 minutes and remove the seeds. Next, add the dates and cottage cheese to a high speed blender and blend until smooth. Throw in the maple syrup, vanilla and brandy and continue to blend into a creamy mixture.

Transfer the cream into a baking tray or a bowl with a lid. Cover and let it freeze for 1 hour. I recommend stirring half-way through freezing to reduce ice crystals. Remove from the freezer and let it sit for 5-10 minutes before scooping into little bowls.

Garnish with chopped dates or chocolate chips and a drizzle of maple syrup and serve. Enjoy!

Storage

Since this ice cream does not contain enough liquid sweeteners, it won’t be as creamy as regular ice cream, therefore, it can only be stored for as long as 1 week in the freezer.

Variations & Tips

Condensed Milk – adding condensed milk will give this ice cream a creamier texture and make it taste like regular ice cream. However, it’ll increase your over all calorie and sugar intake so I recommend using honey if you don’t have maple syrup and want to stick to a lower calorie recipe.

Greek Yogurt – is another great substitute for cottage cheese in ice cream but it won’t give you the same amount of protein or taste, however, it’s a healthy alternative.

Cottage Cheese Brand – choosing a good cottage cheese brand is important when making ice cream. If the cheese has too much liquid, your ice cream will end up icy. 

Note: full fat cottage cheese is ultimately best for ice cream but will increase your sodium, fat and calorie intake.

Maple Syrup – I recommend using organic maple syrup in your ice cream recipes because it is less dense and has fewer calories.

Brandy – is added to this recipe to prevent ice crystals and make the ice cream softer.
