Here is a healthy, low-calorie ground turkey zucchini soup recipe that is packed with flavor and so easy to make! You’ll get enough protein along with other important vitamins and minerals with just one serving of this soup so grab your soup pot and let’s get souping mamas!

I love adding turkey to my soups and it goes well with this zucchini soup recipe but don’t be afraid to experiment with other protein sources as well. Since zucchini season is about to begin, I’ve been experimenting with different recipes and this one turned out delicious!

Zucchini – contains a good amount of fiber and vitamins C & A along with vitamin B6 also known as folate which helps with brain health among others.

Ground Turkey – is a very healthy alternative to chicken, it has fewer calories and contains more vitamins and minerals such as zinc, niacin, and vitamin B12.

Carrots – are rich in vitamins C & A, plus beta-carotene. Not only do they add a delicious flavor to your soups but they also help improve eye health, boost immunity, and are great for the skin.

Olive Oil – contains healthy fats that are great for heart health, lowering high cholesterol, and helps reduce inflammation

Onions – not only add flavor to your recipes but they also provide you with antioxidants, vitamins C, & B6, along with potassium and sulfur.

Ground Turkey Zucchini Soup Recipe

Ingredients for 4 servings | Total time: 1 hour

  • 1 pound of ground turkey (lean)
  • 3 zucchini (diced)
  • 2 large carrots (chopped)
  • 1 can of diced tomatoes (low-sodium)
  • 2 medium potatoes (peeled & diced)
  • 1 tablespoon of olive oil
  • 1 large onion (diced)
  • 2 garlic cloves
  • 1 tablespoon of tomato paste
  • 4 cups of vegetable broth (low-sodium)
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • a pinch of cayenne pepper
  • 2 teaspoons of Italian seasoning
  • 1 lemon juice (fresh)

How To Make Ground Turkey Zucchini Soup

In a large soup pot, heat the olive oil and saute the onions for a minute and add in the garlic, stir fry until aromatic and throw in the ground turkey.

Mix in the black pepper, salt, and Italian seasoning, stir, and let the meat cook until slightly browned in color. Next, add the tomato paste and let it fry until it starts to stick to the bottom of the pot.

Pour in the canned diced tomatoes, scrape the bottom of the pot, and add in the carrots, zucchini, and vegetable broth. Cover and let it come to a boil.

Finally, lower the heat and let the soup simmer for 30 minutes or until all the veggies are well cooked through. Stir in the lemon juice and serve while still hot.

Variations & Tips

I’ve tried this recipe with cooked shredded chicken breast and it was just as good. If you prefer bacon or chunks of beef, they taste great as well.

You can also add carrots, cabbage, celery, and peas to make this soup a lot healthier and delicious. I like to squeeze some fresh lemon juice over my soups before serving, it adds a slight sourness that elevates most soups.

Note: If you don’t have an immersion blender, a regular blender will do.

Storage

You can freeze this soup for up to 2 months but I never keep mine that long. My sweet spot for storing soups is 1 month so that they don’t lose their taste or texture.

Make sure to store it in a freezer-safe container before freezing. Just let the soup thaw completely, reheat on the stove and it’ll be as good as new.

You can also store this ground turkey zucchini soup in the fridge for up to 3 days and heat it in the microwave when you are ready to serve again.
