Chilled Watermelon Soup Recipe
Ingredients for 3 servings | Total time: 5 minutes + 1-2 hours for chilling
- 3 cups of watermelon (remove seeds)
- 1 large cucumber (chopped)
- 1 small onion (chopped)
- 1 small bell pepper (remove seeds)
- 1 small jalapeno (remove seeds)
- 3 medium tomatoes (remove seeds)
- 1 garlic clove (peeled)
- 1/4 cup of fresh mint leaves
- 1/2 tablespoon of lemon juice
- 1 tablespoon of red vinegar
- 2 tablespoons of organic virgin olive oil
- 1/2 teaspoon of salt
- a pinch of black pepper
How To Make Watermelon Soup
Add the watermelon, tomatoes, jalapeno, bell pepper, onion, garlic, cucumber, and mint leaves, to a blender and blend until creamy.
Next add in 1 tablespoon of olive oil, vinegar, lemon juice, salt, and pepper and blend for a few seconds. Pour into serving bowls and chill for a few hours.
When you are ready to serve, garnish with some chopped cucumbers, watermelon, onions and a sprig of mint! Enjoy with a straw or a spoon.

Substitutions
You can substitute the onions for green onions, it’s bring out a slightly fresher taste to the gazpacho but make sure to use only the white part of the green onions.
You could also omit the garlic all together and use only lemon juice instead of red wine vinegar. Other than that, I’ve haven’t tried this recipe with other ingredients yet but I’ll update this section as soon as I do.

Yes you can freeze watermelon soup, simply transfer your soup (without the garnish) into a freezer safe container with a lid and freeze for up to 3 months. To thaw the gazpacho, simply throw it in the fridge overnight and enjoy it the next day.
