This Mexican-style chicken tortilla soup is a healthy version and perfect for those on a diet. You won’t have to worry about eating too many calories if you’re on a low-calorie diet. It’s also low in saturated fat as well if you choose the right toppings so dive in…
Ingredients for 6 servings | preparation & cook time: 30 minutes
- 2 cups of cooked chicken breast | thighs | or leftover chicken (shredded)
- 1 tablespoon of olive oil
- 1 medium onion (chopped)
- 3 garlic cloves (minced)
- 2 cans of crushed tomatoes
- 1 can of green chilies
- 1 can of corn (drained)
- 2 cups of low-sodium chicken stock or broth
- 1 can of black beans (drained and rinsed)
- 1 cup of heavy whipping cream
- 1 teaspoon of garlic powder
- 1 teaspoon of smoked paprika
- 1 teaspoon of chilli powder
- 1 teaspoon of adobo sauce (for a spicy smoky flavor)
- 1 teaspoon of cayenne pepper | jalapeno | chipotle (chopped)
- Toppings: avocado | tortilla chips | sour cream | cheese
How To Make this Spicy Creamy Chicken Tortilla Soup
Heat the olive oil in a large soup pot and saute the onions until golden brown, stir in the garlic for about 30 seconds.
Add in the corn, beans, tomatoes, green chilis, chicken broth, paprika, garlic, chili powder, adobo sauce, and pepper of your choice, and increase the heat to high until your soup comes to a boil.
At this point, you can choose to puree all or half of the soup with a hand blender because once you add in the chicken, you won’t be able to. (I usually puree 75% of the soup for a more creamy texture)
Reduce the heat, add in the chicken and cream, and half cover the pot, let the soup simmer for 10-15 minutes, and serve with your favorite toppings.
