Just a little heads up though, this cottage cheese ice cream is a bit harder than regular ice cream. That’s because were using low fat cottage cheese to reduce calorie intake. Also, you may notice a few ice crystals but that can be fixed with a teaspoon of brandy.
Mint Chocolate Chip Cottage Cheese Ice Cream Recipe
Ingredients for 2 servings | Total time: 1 hour 5 minutes
- 2 cups of cottage cheese (low-fat)
- 1/4 cup of maple syrup (organic)
- 1 teaspoon of vanilla extract
- 1/4 teaspoon of peppermint extract
- 1/4 cup of crushed chocolate (semi-sweet)
- 1 teaspoon of brandy (optional but recommended)
- 1/2 teaspoon of green food coloring (optional)
How To Make Mint Chocolate Chip Cottage Cheese Ice Cream
Add the cottage cheese, maple syrup, vanilla, peppermint extract and brandy into a good food processor and blend until extra smooth and creamy. Using a spatula, stir in the crushed chocolate chips and transfer the ice cream into a lined baking tray or a bowl.
Cover with a cling film or if your bowl has a lid, cover and let it freeze for one hour. Before serving, let the ice cream thaw for 5-10 minutes so that it’s easier to scoop out into bowls. Garnish with chocolate chips, and maple syrup and enjoy.

Storage
You can only store this chocolate chip mint cottage cheese ice cream in the freezer for one week. Any longer will cause it to harden and for ice crystals.
Variations & Tips
Condensed Milk – adding condensed milk will give this ice cream a creamier texture and make it taste like regular ice cream. However, it’ll increase your over all calorie and sugar intake so I recommend using honey if you don’t have maple syrup and want to stick to a lower calorie recipe.
Greek Yogurt – is another great substitute for cottage cheese in ice cream but it won’t give you the same amount of protein or taste, however, it’s a healthy alternative.
Cottage Cheese Brand – choosing a good cottage cheese brand is important when making ice cream. If the cheese has too much liquid, your ice cream will end up icy. Also, if you want a low sodium ice cream, I recommend going for a low sodium cottage cheese.
Note: full fat cottage cheese is ultimately best for ice cream but will increase your sodium, fat and calorie intake.
Note: Adding too much peppermint extract will make your ice cream taste like tooth paste!
Maple Syrup – I recommend using organic maple syrup in your ice cream recipes because it is less dense and has fewer calories.
Brandy – is added to this recipe to prevent ice crystals and make the ice cream softer.
Chocolate Chips – I use organic food bars chocolate chips because they have less sugar and are low in calories. If you don’t have chocolate chips, simply crush up some chocolate bars and it’ll do.
