Best Apples For Apple Pie

When choosing apples for your apple pie, you want to get the ones that are firm and have a balance of sweet and tartness. I usually use Granny Smith apples because they are lower in calories and are also all of the above. However, you can also use honey crisp or pink lady apples but they are slightly higher in calories and sugar.

Ingredients for 8 servings | Total time: 30 minutes

  • 4 pounds of Granny smith apples (peeled, cored & diced)
  • 2 tablespoons of stevia
  • 2 tablespoons of cornstarch
  • 2 teaspoons of ground cinnamon (Ceylon)
  • a pinch of salt
  • 2 teaspoons of lemon juice (fresh)
  • 1/2 teaspoon of lemon zest

How To Make Apple Pie Filling

Start by dicing the apples into very small cubes, in another bowl, whisk together the dry ingredients, (cinnamon, cornstarch, stevia, and salt).

Next, combine the apples with the mixed dry ingredients, making sure to coat the apples well. Grab a large saucepan and set it over medium high heat and add in the coated apples along with the lemon juice and zest.

Stir the apple pie filling and as soon as you start to see steam coming up, lower the heat to medium. You must stir the filling every minute or two so that it doesn’t burn.

Let it cook until the apples are tender and the mixture thickens. This process should take around 15-20 minutes. Finally, let the apple pie filling cool slightly before using it.

Storage

To store your apple pie filling, transfer it into a plastic container with a lid and store it in the fridge for up to 7 days. You can also freeze it for up to 3 months but I never let mine go past 1 month cause I find that the taste and texture changes when I do.

How To Use Frozen Apple Pie Filling

If your apple pie filling has been in the freezer for a long time, you will need to thaw it overnight in the fridge. The next day, you may find that there is extra liquid in the filling, slowly drain it or use a small spoon to scoop it out. Give it a quick stir, heat it up in the microwave or the stovetop before putting it in your crust.
